    3/4 cup (175 mL) dry green lentils

    1 tsp (5 mL) dried oregano

    1 tsp (5 mL) chili powder

    1/2 tsp (2 mL) dried thyme

    1/2 tsp (2 mL) onion powder

    1/4 tsp (1 mL) ground cayenne

    2 1/4 cups (560 mL) water


Directions

  1. Combine lentils with the spices and water. Be sure to use a large enough saucepan as the lentils will double or triple in size.
  2. Bring to a boil, cover tightly, reduce heat and simmer for 15-20 minutes or until the lentils are tender. Stir occasionally.

Tasty Preparation Tips:
-Use vegetable or chicken stock instead of water to enhance the flavour
-Saute 1 chopped onion in 1 Tbsp (15 mL) of oil on medium heat for 3 minutes. Add the spices and continue to cook for 1 minute. Add the water or stock as well as lentils and continue to follow the cooking directions above
-Toss in your favourite vegetables such as chopped tomato, peppers, and green onion
-Like it hot? Feel free to add more cayenne pepper or add your favourite hot sauce to the cooked lentils
