Lentil & Ham Frittata

This frittata is made with all the best components of a hearty weekend breakfast: ham, egg, potatoes, cheese, and lentils of course! We use cheddar, but gruyere or swiss are equally delectable.

    2 Tbsp (30 mL) butter

    1 small onion, finely chopped

    3/4 cup (175 mL) chopped deli ham

    1 cup (250 mL) diced cooked potato

    4 large eggs

    2 Tbsp (30 mL) half and half cream

    1/4 cup (60 mL) chopped parsley

    3/4 cup (175 mL) cooked split red lentils

    1/2 tsp (2 mL) salt

    1/4 tsp (1 mL) pepper

    1/2 cup (125 mL) halved cherry tomatoes

    3/4 cup (175 mL) shredded aged cheddar


Directions

  1. In a cast iron skillet set over medium-high heat, melt the butter. Stir in onions and sauté 2 minutes, stirring occasionally. Stir in ham and cook another 3 minutes until onions are lightly browned. Stir in potato and let it cook another minute.
  2. In a medium bowl, whisk together eggs, cream, and parsley. Stir in lentils and season with salt and pepper.
  3. Pour egg mixture over the ham mixture and reduce heat to medium-low. Stir the eggs around a little, just until almost set. Remove from heat and top with tomatoes, cut side facing up, and shredded cheese.
  4. Preheat broiler. When hot, place skillet under the broiler and broil until eggs are golden, set, and puffed. Remove from broiler and let stand 5 minutes before serving.
