    ½ cup dry split red lentils

    1 cup brown rice

    ¾ cup coconut milk

    2¼ cups water

    1 small onion, chopped

    1 tbsp margarine

    ¼ tsp thyme, dry and crumbled

    ¼ tsp garlic powder

    ½ tsp curry powder

    ¼ tsp ground ginger

    ½ tsp salt


Directions

  1. In a saucepan, combine lentils, rice, coconut milk, water, onion, margarine, thyme, garlic powder, curry, ginger, and salt. Stir.
  2. Bring to a boil, cover and simmer for 50 minutes.
