Southern Tex Mex Spiced Lentils

    ¾ cup (175 mL) green lentils

    1 tsp (5 mL) chili powder

    1 tsp (5 mL) cumin

    ½ tsp, (2 mL) dried oregano

    ½ tsp (2 mL) garlic powder

    1/8 tsp (0.5 mL) ground cayenne

    2 ¼ cups (560 mL) water


Directions

  1. Combine lentils with the spices and water. Be sure to use a large enough saucepan as the lentils will more than double in size once cooked.
  2. Bring to a boil, cover tightly with a lid, reduce heat and simmer for 15-20 minutes or until the lentils are tender. Stir occasionally.

(Optional) Tasty Preparation Tips:
-Use vegetable or chicken stock, instead of water, to enhance the flavour
-Saute 1 chopped onion in 1 Tbsp (15 mL) of oil on medium heat for 3 minutes. Add the spices and continue to cook for 1 minute. Add liquid and lentils, and continue to follow the cooking directions above
-Toss in your favourite vegetables such as chopped tomato, peppers, and green onion
-Like it hot? Feel free to add more cayenne pepper or add your favourite hot sauce to the cooked lentils
-Try this dish in a slow-cooker with your favourite vegetables and meat
