Directions

  1. Preheat an oven to 425°F (220°C).
  2. In a mixing bowl combine lentils, potato, turmeric, curry powder, garam masala, 3 Tbsp (45 mL) oil, and granulated garlic. Mash mixture to a smooth yet textured consistency. Fold through the browned beef. Cover and keep warm for service.
  3. Toss cauliflower well 2 Tbsp (30 mL) oil, coriander, and cumin. Transfer in an even layer to a sheet pan and roast in the oven for 20 minutes.
  4. While cauliflower is roasting, blend yogurt, mint, and lime juice in a blender until vibrant and green.
  5. To build the frankies, place a warmed tortilla on a cutting board and spread generously with the curried lentil and potato mix. Top with the cauliflower, beets, carrots, onion, and spinach leaves. Drizzle each with approximately 2 Tbsp (30 mL) of yogurt sauce just prior to wrapping and serving.

½ lb (250 g) baby red potatoes, cut into quarters, boiled very tender

2 tsp (10 mL) turmeric

2 tsp (10 mL) curry powder

2 tsp (10 mL) garam masala

5 Tbsp (75 mL) canola oil, divided

1 Tbsp (15 mL) granulated garlic

1 lb (500 g) ground beef, browned

2 cups (500 mL) cauliflower florets

3 Tbsp (45 mL) ground coriander

3 Tbsp (45 mL) ground cumin

2 ½ cups (625 mL) non-fat plain Greek yogurt

1 cup (250 mL) fresh mint, packed leaves

2 Tbsp (30 mL) lime juice

10 ea extra-large whole wheat tortilla

2 cups (500 mL) beets, raw, grated

2 cups (500 mL) carrots, raw, grated

2 cups (500 mL) red onions, sliced

2 cups (500 mL) spinach leaves
