Directions

  1. Preheat oven to 350˚F (180˚C).
  2. In a large bowl, toss bread, cranberries, apples, and lentils together.
  3. In a separate bowl, whisk together eggs, milk, cream, sugar, 2 Tbsp (30 mL) butter, rum, cinnamon, vanilla, and salt.
  4. Pour egg mixture over bread and gently combine until bread is coated. Allow mixture to sit for approximately 15 minutes. This will allow bread to absorb the liquid (this helps to make a nice moist end product).
  5. Using remaining 1 Tbsp (15 mL) butter grease 9 x 13 inch (22 x 33 cm) square baking dish. Pour mixture in to baking pan and bake for 45-60 minutes, or until the pudding is golden and set in the centre.
  6. Cut into squares and serve warm with a scoop of your favourite ice cream and sliced apples.

Ingredients

1/2 loaf bread, cut into small cubes (about 12 slices)

3/4 cup (175 mL) dried cranberries

1 Granny Smith apple, core removed, diced

1 cup (250 mL) cooked lentils or canned lentils, drained & rinsed

4 large eggs, whisked lightly

2 cups (500 mL) 2% milk

1 cup (250 mL) 35% cream

1 cup (250 mL) brown sugar

3 Tbsp (45 mL) melted butter

2 Tbsp (30 mL) spiced rum (optional, but delicious)

1 tsp (5 mL) cinnamon

1 Tbsp (15 mL) vanilla extract

1/4 tsp (1 mL) salt
