A quick curry of lentils, onion, garlic, curry paste, coconut milk is served over top of crinkle-cut fries with a crumble of paneer.

Directions

  1. Heat pan over medium heat. Add oil and fry onions until soft and translucent. Add garlic and stir for 30 seconds.
  2. Add lentils, chili flakes, curry paste, and coconut milk. Simmer for ten minutes. Serve warm over prepared fries. Garnish with crumbled paneer and parsley.

Ingredients

2 Tbsp (30 mL) vegetable oil

1 cup (250 mL) yellow onion, diced small

2 Tbsp (30 mL) garlic, minced

2 cups (500 mL) korma curry paste

½ cup (125 mL) coconut milk, low-fat

4 cups (1 L) whole red lentils, cooked and drained well

2 tsp (10 mL) red chili flakes

5 cups (1.25 L) crinkle cut French fries, cooked

1 cup (250 mL) paneer, crumbled

¼ cup (60 mL) Italian flat leaf parsley, minced
