Directions

  1. In a large, heavy skillet, heat a drizzle of oil over medium-high heat and sauté pepper for 3-4 minutes, until soft. Add pork and cook, breaking up with a spoon, until meat is no longer pink.
  2. Add lentils and green onions and cook for another minute or two. Add hoisin sauce and stir to combine well, heating mixture through. Season with salt and pepper.
  3. Serve lentil mixture warm, with lettuce leaves for guests to fill, wrap, and eat. One lettuce leaf per 1/4 cup (60 mL) filling.

1 Tbsp (15 mL) canola oil

1 red or yellow pepper, seeded and diced

1⁄2 lb (250 g) ground pork

1 cup (250 mL) canned lentils, drained and rinsed

2 green onions, chopped

1⁄4 cup (60 mL) hoisin sauce

1/2 tsp (2 mL) salt

1/2 tsp (2 mL) ground black pepper

10 butter or small romaine or leaf lettuce leaves, for serving
