Menemen is a traditional Turkish dish which includes eggs, tomato, peppers, and spices. Similar to shakshuka, menemen is commonly eaten at breakfast or as a main dish, served with bread.

Directions

  1. In a large cast iron skillet or paella pan, heat oil over a medium-low heat and add paprika, oregano, pepper, onions, and peppers. Cook and stir frequently until onions and peppers are soft.
  2. Add tomatoes and cook for 3 minutes. Add lentils and toss well to mix and warm through.
  3. Remove half of the mixture from the pan and set aside. Add eggs to the pan and scramble until the eggs are soft curd. Immediately remove from heat and gently fold in reserved lentil mix and garnish with parsley. Serve hot.

3 Tbsp (45 mL) canola oil

2 tsp (10 mL) smoked paprika

1 tsp (5 mL) dried oregano

1 ½ Tbsp (22 mL) black pepper, fine ground

2 cups (500 mL) yellow onions, minced

2 cups (500 mL) poblano pepper, small dice

2 cups (500 mL) Roma tomato, small dice

5 cups (1.25 L) whole red lentils, cooked

12 eggs, beaten

½ cup (125 mL) flat leaf parsley, minced
