Directions

  1. Preheat oven to 180° C (350° F).
  2. To prepare crust, combine graham crumbs, margarine and honey. Mix well. Press into 22 cm (9 inch) pie plate.
  3. In a food processor, combine lentils, cream cheese, honey, oil, cornstarch, vanilla and salt. Blend until puréed. Pour into mixing bowl. Stir in pineapple and coconut. Pour into pie shell.
  4. Bake 20 minutes. Remove from oven and cool. Cut into 12 wedges.

Crust:

11/4 cups graham crumbs

1/4 cup margarine, melted

2 tbsp liquid honey

Filling:

2 1/2 cups red split lentils, cooked

250 g low fat cream cheese

1/3 cup liquid honey

1 tbsp canola oil

1 tsp cornstarch

1 tsp vanilla

1/2 tsp salt

14 oz can unsweetened crushed pineapple, drained

1/2 cup shredded unsweetened coconut
