Directions

  1. In a food processor, add lentils, sweet potato, garlic, tahini, lemon juice, and cumin. Blend until smooth and adjust seasoning as needed with lemon juice, salt, or water.
  2. Drizzle the final vessel(s) with basil pesto.

2 cups (500 mL) whole red lentils, cooked and drained well

2 cups (500 mL) sweet potatoes, peeled, roughly chopped, and roasted

1 Tbsp (15 mL) garlic, roughly chopped

½ cup (125 mL) tahini

¼ cup (60 mL) lemon juice

1 tsp (5 mL) cumin

1 ½ tsp (7 mL) salt

¼ cup (60 mL) basil pesto
