A warm side dish of lentils, with celery, carrots, garlic, thyme, and sundried tomatoes, simmered in stock.

Directions

  1. In a large sauce pot over medium to high heat, add oil, celery, carrots, and garlic and sauté until soft and aromatic.
  2. Add thyme and sundried tomatoes and heat for 2 minutes.
  3. Add stock and lentils and bring to a boil. Reduce heat to a simmer and cook for 20-25 minutes until the lentils are tender and have absorbed the majority of the stock.
  4. Drain any excess liquid and serve immediately.

3 Tbsp (45 mL) canola oil

1 cup (250 mL) celery, diced small

1 cup (250 mL) carrots, diced small

2 Tbsp (30 mL) garlic, minced

2 tsp (10 mL) fresh thyme, picked and minced

2 Tbsp (30 mL) sun dried tomatoes, minced

3 cups (750 mL) whole red lentils, dry

8 cups (2 L) low-sodium beef stock
