Korean Burger

  • 1 lb (500 g) lentils, whole red, cooked, pureed
  • 1 lb (500 g) mushrooms, roasted, pureed
  • 1 lb (500 g) ground beef
  • 3 Tbsp (45 mL) ginger, ground
  • ¼ cup (60 mL) garlic, chopped, sautéed
  • 3 Tbsp (45 mL) crushed red pepper flakes
  • ¼ cup (60 mL) low-sodium soy sauce
  • ½ cup (125 mL) scallions, chopped
  • 3 Tbsp (45 mL) dark brown sugar
  • 1 quart (1 L ) kimchi, roughly chopped
  • 1 quart (1 L) prepared coleslaw
  • 3 cups (750 mL) kewpie mayo
  • ½ cup (125mL) Sambal Olek
  • 14 burger buns

Directions

  1. Combine pureed lentils and mushrooms with ground beef.
  2. Add ginger, garlic, red pepper flakes, soy sauce, scallions, and brown sugar.
  3. Form 14 4 oz patties.
  4. Grill on a flat top to desired burger doneness.
  5. While the patties are cooking, in a mixing bowl combine kimchi and coleslaw.
  6. In a separate bowl, whisk together mayo and chili sauce until homogenous.
  7. To build burger, top bun with a patty, ½ cup (125 mL) kimchi slaw, and 2 oz of spicy kewpie mayo.
