Ingredients

  • 2 cups (500 mL) whole red lentils, cooked
  • ¼ cup (60 mL) canola oil
  • ½ cup (125 mL) agave
  • 2 tsp (10 mL) paprika
  • 2 tsp (10 mL) coriander
  • 2 tsp (10 mL) cumin
  • 1 tsp (5 mL) ginger powder
  • 2 tsp (10 mL) salt
  • ¼ cup (60 mL) sunflower seeds
  • 1 cup (250 mL) raw cashews

Directions

  1. Pre-heat oven to 325°F (160°C).
  2. In a large mixing bowl, combine all ingredients together and stir to evenly coat and blend.
  3. Spread the mixture in an even layer onto a parchment lined sheet tray and bake for 30-45 minutes until the mixture is golden brown and aromatic.
  4. Stir every 10-15 minutes so that it bakes evenly.
  5. Allow mixture to cool completely. Store in an airtight container for up to one month.
