Crunchy Caribbean Jerk Spiced Lentils

  • Jerk Spice Blend:
  • 3 Tbsp (45 mL) allspice
  • 2 Tbsp (30 mL) smoked paprika
  • 2 Tbsp (30 mL) dried thyme
  • 1 Tbsp (15 mL) nutmeg
  • 1 Tbsp (15 mL) cinnamon
  • 4 tsp (20 mL) cayenne
  • 1 Tbsp (15 mL) garlic powder
  • 1 tsp (5 mL) sea salt
  • 1 qt (1 L) whole red (brown) lentils, dry, rinsed
  • ½ cup (125 mL) olive oil
  • 1 cup (250 mL) toasted coconut flakes
  • ½ cup (125 mL) fresh cilantro, minced

Directions

  1. Preheat oven to 400°F (200°C).
  2. Combine allspice, paprika, thyme, nutmeg, cinnamon, cayenne, garlic, and sea salt.
  3. On sheet pans, spread lentils in a single layer. Drizzle with oil and sprinkle with jerk spice blend; tossing to coat evenly.
  4. Roast for 18-20 minutes, stirring once halfway, until lentils are crisp and golden brown but not burnt.
  5. Remove from oven and while warm, fold in coconut flakes. Allow to cool completely on sheet pans.
  6. Once cooled, mix in cilantro. Store in sealed container for up to 1 week.

Use these crunchy lentils as a garnish topping to rice, proteins, bowls, and more!
