Ingredients

  • 10 oz (300 mL) hot honey
  • 10 oz (300 mL) water
  • 5 cups (1.25 L) Israeli couscous, cooked
  • 5 cups (1.25 L) whole red lentils, cooked
  • 2 ½ cups (625 mL) zucchini, thinly sliced rounds, roasted
  • 5 cups (1.25 L) broccoli, florets
  • 2 ½ cups (625 mL) sugar snap peas
  • 2 ½ cups (625 mL) carrots, shredded
  • 20 oz (600 g) rotisserie chicken, broken down and cut into 2 oz portions (mix of dark and light meat)

Directions

  1. Lightly whisk hot honey with water to thin it out slightly.
  2. To plate this dish, prepare a base of ½ cup (125 mL) of couscous and ½ cup (125 mL) of lentils.
  3. Top with ¼ cup (60 mL) each of the zucchini, sugar snaps, and carrots, and ½ cup (125 mL) of broccoli.
  4. Top each serving with 2 oz (60 g) warm chicken and a 2 oz (60 mL) drizzle of hot honey.
