  • Masala Lentils
  • 2 Tbsp (30 mL) canola oil
  • 1 cup (250 mL) white onion, small dice
  • 1 Tbsp (15 mL) garlic puree
  • 1 Tbsp (15 mL) ginger puree
  • 2 Tbsp (30 mL) tomato paste
  • 2 tsp (10 mL) garam masala
  • 1 tsp (5 mL) cumin
  • 1 tsp (5 mL) coriander, ground
  • ½ tsp (2 mL) turmeric
  • 1 tsp (5 mL) chili powder
  • 6 cups (1.5 L) cooked whole red (brown) lentils
  • ½ cup (125 mL) vegetable stock
  • 2 Tbsp (30 mL) lemon juice
  • 2 tsp (10 mL) salt
  • Cilantro-Lime Chutney Crema
  • 2 cups (500 mL) sour cream
  • 1 cup (250 mL) cilantro leaves
  • 3 Tbsp (45 mL) lime juice
  • 1 tsp (5 mL) minced garlic
  • 1 jalapeno, seeds removed
  • 2 tsp (10 mL) water
  • Build:
  • 10 flour tortilla, street taco size
  • 2 cups (500 mL) shredded cabbage
  • 2 cups (500 mL) pickled red onions
  • ½ cup (125 mL) cilantro, minced

Directions

  1. For the masala lentils: In a large sauté pan heat oil over medium to high heat. Cook onion until soft, approximately 4–5 minutes.
  2. Add garlic and ginger and sauté for 1 minute. Stir in tomato paste and garam masala, cumin, coriander, turmeric, and chili powder, toasting until aromatic.
  3. Add lentils and stock, simmering for 5–7 minutes until slightly thickened and cohesive, but not soupy.
  4. Finish with lemon juice and salt. Hold warm for service.
  5. For the crema: Blend all ingredients in a blender until smooth and drizzle-able. Adjust seasoning as preferred.
  6. Build: Warm a tortilla in a dry pan. Add approximately ⅓-½ cup (75-125 mL) lentils. Top with a small handful of cabbage, pickled onions, and a drizzle of crema. Garnish with cilantro and serve immediately.
