Learn all about lentils, how to cook them in unique ways using various pieces of equipment, and apply them across your menu with Lentils.org Corporate Chef James Bickmore-Hutt in two different ways: Online or In-Person.

Whether you are learning online or engaging with us via our in-person program, each format will cover the following:

  • How lentils are produced
  • Why lentils are so sustainable
  • Nutritional benefits of lentils
  • How to cook tender lentils using various commercial cooking equipment
  • How to make crunchy, crispy, and pickled lentils
  • Full cooking demonstrations using lentils in unique ways covering all areas of the menu and dayparts including: blends, whole food plant-based crumbles, power bowls and salads, premium side dishes, plant-forward entrees, global handhelds, while anchoring all in global and regional cuisine trends

ONLINE, SELF-PACED:

  • Lentils.org created the Lentils.org Learning Hub which is a free online training course for foodservice chefs to partake in a virtual version of our program through video modules, supplementary reading and resources, and short quizzes
  • A certificate and 9.0 ACF CEH are awarded at the successful completion of the course
  • This is a great offering for smaller operations, ones where taking group staff time out for professional development can prove challenging, or those looking to deepen their skill set at their own pace

ON-SITE, IN-PERSON:

  • Our premiere offering where the Lentils.org team offers on-site training to your team at you facility or campus
  • The program is tailored to your individual operations’ needs and goals
  • An average program usually lasts five hours and includes a short classroom presentation, kitchen sensory exercise and culinary demonstration including tastings, and a small-group hands-on activity for culinarians, but can be customized
  • The first half of the day’s content is applicable to the following roles: chefs and culinarians, health and wellness, sustainability, marketing, and leadership staff
  • The second half of the day and the hands-on component is reserved for the culinary team
  • Optionally, the program can also welcome other area culinary teams from neighboring campuses
