    2 Tbsp (30 mL) canola oil

    1 cup (250 mL) leek, sliced thin

    1 tsp (5 mL) kosher salt

    1 tsp (5 mL) white pepper

    ¼ cup (60 mL) white wine vinegar

    2 cups (500 mL) whole red lentils, cooked and drained well

    2 cups (500 mL) pearled barley, cooked and drained well

    ¼ cup (60 mL) chives, minced

    ¼ cup (60 mL) fresh thyme, minced


Directions

  1. To a sauté pan add oil, leeks, salt, and pepper over medium. Cook over a medium to high heat until soft and aromatic. Deglaze pan with white wine vinegar. Add lentils and barley and toss to coat and heat through.
  2. Garnish with the herbs and serve warm or at room temperature with an optional additional drizzle of oil.
  3. Serve as a side dish, with fish, or as a hearty base for a grain bowl.
