    2 Tbsp (30 mL) oil

    1 cup (250 mL) kosher dill pickles, minced

    1 cup (60 mL) sundried tomatoes, minced

    2 cups (500 mL) whole red lentils, cooked and drained well

    2 cups (500 mL) bulgur, cooked and drained well

    ¼ cup (60 mL) flat leaf parsley, minced

    ¼ cup (60 mL) fresh basil, minced


Directions

  1. Fold all ingredients together in a bowl and serve either warm or cold.
  2. Serve as a side dish, with fish, or as a hearty base to a grain bowl.
