Classic Beef & Lentil Street Tacos

Minced flank steak blended with cooked lentils & spiced with cumin, chili powder, salt & pepper, cooked until browned and served on a warm tortilla with raw onion, cilantro, and salsa verde.

    2 Tbsp (30 mL) extra virgin olive oil

    1 lb (500 g) flank steak, finely minced

    1 lb (500 g) whole red lentils, cooked

    1 Tbsp (15 mL) cumin, powder

    1 Tbsp (15 mL) chili powder

    2 tsp (10 mL) salt

    2 tsp (10 mL) black pepper, finely ground

    20 corn tortillas, lightly warmed

    2 cups (500 mL) white onion, small dice

    2 cups (500 mL) fresh cilantro, minced

    20 oz (600 mL) salsa verde


Directions

  1. In a large sauté pan over medium-high heat oil. Add beef, lentils, cumin, chili powder, salt, and pepper and cook until browned and cooked throughout, approximately 5-6 minutes. Keep warm and set aside.
  2. To serve, add beef and lentil mix to a warmed tortilla, top with onion, cilantro, and a 2 oz drizzle of salsa verde.
