Houston’s-Inspired Veggie Burger

    2 lb (1 kg) whole red lentils, cooked and drained well

    2 Tbsp (30 mL) garlic, minced

    2 tsp (10 mL) smoked paprika

    2 tsp (10 mL) cumin

    1 tsp (5 mL) chili powder

    2 tsp (10 mL) kosher salt

    2 tsp (10 mL) black pepper, fine ground

    2 Tbsp (30 mL) brown mustard

    2 Tbsp (30 mL) BBQ sauce

    2 Tbsp (30 mL) molasses

    ½ cup (125 mL) yellow onion, minced

    1 cup (250 mL) old fashioned oats, pulsed in food processor

    2 ½ cups (625 mL) brown rice, cooked

    ½ cup (125 mL) pureed beets


Directions

  1. Use a metal spoon to mash roughly half of the lentils into a paste.
  2. Combine garlic, paprika, cumin, chili powder, salt, and pepper with mustard, BBQ, and molasses. Add the lentils.
  3. Add onion, oats, brown rice, and beets and mix thoroughly by hand.
  4. Add additional oats to manage the moisture content and binding properties, as needed.
  5. Form into 5 oz (140 g) patties. Cook on a hot grill or plancha for 5-7 minutes, until an exterior crust is developed and the patties have heated through.

Optional - after grilling, brush with sweet soy sauce before serving in a traditional burger style.
