Ingredients

1 cup (250 mL) dry split red lentils

    1 1/2 tsp (7 mL) ground cumin

3/4 tsp (4 mL) ground coriander

1/4 tsp (1 mL) ground turmeric

1/2 tsp (2 mL) garlic powder

1/4 tsp (1 mL) chili flakes (optional)

    3 cups (750 mL) water

Directions

  1. Combine lentils with spices and water. Be sure to use a large enough saucepan as the lentils will double in size.
  2. Bring to a boil, cover tightly, reduce heat and simmer for 5-7 minutes or until the lentils are tender. Stir occasionally.

Tasty Preparation Tips:
-Use vegetable or chicken stock, or coconut milk instead of water to enhance the flavour
-Saute 1 chopped onion in 1 Tbsp (15 mL) of oil on medium heat for 3 minutes. Add the spices and continue to cook for 1 minute. Add water, stock, or coconut as well as lentils and continue to follow the cooking directions above
-Toss in your favourite chopped vegetables at the end
-Like it hot? Feel free to add more chilies
