Lentil Falafel Burger

    2 cups (500 mL) whole red lentils, cooked and drained well

    2 cups (500 mL) onion, roughly chopped

    ¾ cup (175 mL) parsley, chopped

    ¾ cup (175 mL) cilantro, chopped

    2 tsp (10 mL) salt

    ½ tsp (2 mL) dried hot red pepper

    6-8 garlic cloves

    2 tsp (10 mL) cumin

    1 cup (250 mL) all-purpose flour (only if needed)

    2 tsp (10 mL) baking powder

    ¼ cup (60 mL) canola oil

    10 burger buns

    20 oz cacik (see below)

    20 butter lettuce leaves

    5 cups (1.25 L) pickled red onions


Directions

  1. Add lentils and onions to the bowl of a food processor. Add parsley, cilantro, salt, hot pepper, garlic, and cumin. Process until blended but not fully puréed—it should appear mealy. If needed, add flour, 1 Tbsp (15 mL) at a time, until desired consistency is reached.
  2. Add baking powder and adjust seasoning to taste.
  3. Using water to wet your hands so the patties do not stick, form the mixture into 10 patties. Lightly dredge in some additional flour.
  4. Heat oil on a flat top and cook patties over medium heat until a golden-brown crust has formed and the patties are heated through, approximately 4 minutes per side.
  5. Serve on buns with a drizzle of cacik, lettuce, and pickled red onions.
  6. To make the Cacik (Turkish Yogurt with Cucumbers & Herbs)

    Ingredients:

    1 tsp (5 mL) garlic puree

    1 cup (250 mL) plain Greek yogurt (or sub plant-based for vegan option)

    2 tsp (10 mL) dried mint

    ½ cup (125 mL) Persian cucumbers, grated

    2 Tbsp (30 mL) extra virgin olive oil

    ½ tsp (2 mL) kosher salt

    Directions:

    Combine all ingredients and store chilled.
