Lentil Kotlet (Persian Patties)

Lentils are combined with onion and packed with parsley, basil, mint, garlic, garam masala, cumin, coriander, paprika, and turmeric and fried into flavor-packed morsels. Kotlet, a traditional Persian dish, are traditionally meat-based, however this version appeals to the vegetarian consumer.

    1 lb (500 g) whole red lentils, cooked and drained

    3 cups (750 mL) yellow onion, grated

    6 each eggs

    ¾ cup (175 mL) breadcrumbs

    ½ cup (125 mL) flat leaf parsley, minced

    ½ cup (125 mL) fresh basil, minced

    ¼ cup (60 mL) mint, minced

    ¼ cup (60 mL) garlic, minced

    1 Tbsp (15 mL) garam masala

    1 Tbsp (15 mL) cumin

    1 Tbsp (15 mL) coriander, ground

    1 Tbsp (15 mL) paprika

    1 Tbsp (15 mL) black pepper

    ½ Tbsp (7 mL) turmeric

    1 Tbsp (15 mL) kosher salt


Directions

  1. Place all ingredients in a stand mixer with a paddle attachment and process for 5 minutes. Allow the mixture to rest for 30 minutes.
  2. Divide mixture into 30 equal balls and then flatten into oval disks.
  3. Heat a deep fryer to 375° (190°).
  4. Fry the kotlet in batches for roughly 5 minutes on each side.
  5. Serve with rice or flatbread.
