Lentil Sloppy Joes

A warm, comforting classic, just sans the meat (not that you will miss it) - peppers, onions, garlic, lentils, and tomatoes all stewed together with brown sugar, mustard, Worcestershire, and a touch of chili, served on a warm, soft bun.

    2 Tbsp (30 mL) olive oil

    ½ cup (125 mL) red bell pepper, minced

    1 cup (250 mL) yellow onion, minced

    2 Tbsp (30 mL) garlic, minced

    2 lb (1 kg) whole red lentils, cooked

    2 Tbsp (30 mL) tomato paste

    1 cup (250 mL) ketchup

    ½ cup (125 mL) vegetable stock

    1 Tbsp (15 mL) brown sugar

    2 tsp (10 mL) Dijon mustard

    1 tsp (5 mL) chili powder

    2 tsp (10 mL) Worcestershire sauce

    ½ tsp (2 mL) black pepper, finely ground

    10 burger buns, for serving


Directions

  1. In a large skillet over medium to high heat, add oil and sauté bell pepper, onions, and garlic until fragrant and onion is translucent.
  2. Add lentils and tomato paste. Stir well to evenly coat and cook the tomato paste.
  3. Add ketchup, stock, sugar, mustard, chili, Worcestershire, and pepper. Stir well to combine and cook for 10-15 minutes to heat through and allow sauce to thicken.
  4. Serve hot over toasted burger buns.
