    3 lb (1.5 kg) frozen French fries

    2 tsp (10 mL) canola oil

    1 lb (500 g) whole green lentils, cooked

    1 ½ lb (750 g) brisket, cooked and shredded

    2 tsp (10 mL) smoked paprika

    1 tsp (5 mL) salt

    1 tsp (5 mL) garlic powder

    1 tsp (5 mL) onion powder

    ½ tsp (2 mL) cumin

    ½ tsp (2 mL) coriander

    ½ tsp (2 mL) chipotle powder

    ¾ cup (375 mL) cheese curds

    ½ cup (125 mL) pickled jalapeno

    ½ cup (125 mL) chopped green onion

    Optional Garnish:

    ½ cup (125 mL) split red lentils, fried*


Directions

  1. Oven bake or fry the French fries to the desired color and texture.
  2. Heat oil in large sauté pan over medium heat. Add lentils, brisket, paprika, salt, garlic powder, onion powder, cumin, coriander, and chipotle to the pan. Toss well to season and heat through.
  3. When fries are crispy and drained, top them with lentil and brisket blend and cover with cheese curds.
  4. Place in oven or salamander to melt the cheese.
  5. Remove from heat and garnish with jalapeno, green onion, and crispy fried lentils.

*To make crispy fried lentils>
Drop cooked split red lentils into a fryer for 2-3 minutes. Drain well.
