    3 Tbsp (45 mL) lemon juice

    1 cup (250 mL) prepared pesto

    ¼ cup (60 mL) crème fraiche

    1 lb (500 g) whole red lentils, cooked

    3 cups (750 mL) spring peas, cooked and chilled

    2 cups (500 mL) sweet corn

    1 cup (250 mL) pinenuts, toasted

    1 cups (250 mL) parmesan cheese, finely grated


Directions

  1. In a mixing bowl, combine lemon juice, pesto, and crème fraiche. Whisk well to combine and set aside.
  2. Fold lentils, spring peas, sweet corn, pine nuts together in a large bowl with the dressing.
  3. Garnish each serving with 2 Tbsp (30 mL) grated parmesan cheese.
  4. Store cold.
