    5 everything bagels, halved and toasted

    5 avocados, halved and pitted

    ⅔ cup (150 mL) whole red lentils, cooked in 50/50 water and red wine vinegar and shocked

    2 ½ cups (625 mL) radish, sliced thin

    ⅔ cup (150 mL) cotija cheese, crumbled

    ⅔ cup (150 mL) alfalfa sprouts

    5 tsp (25 mL) tajin


Directions

  1. To build: Top each bagel half with half of an avocado mashed, 2 Tbsp (30 mL) of lentils, ¼ cup (60 mL) of sliced radishes, 2 Tbsp (30 mL) of cotija cheese, 2 Tbsp (30 mL) of alfalfa sprouts, and ½ tsp (2 mL) of tajin.
