  • 1 lb (500 g) raw shrimp, deveined, shell and tail removed
  • 4 Tbsp (60 mL) fish sauce
  • ½ lb (250 g) split red lentils, cooked
  • 1 tsp (5 mL) salt
  • 2 tsp (10 mL) sugar
  • ½ tsp (2 mL) black pepper
  • 4 Tbsp (60 mL) canola oil
  • 20 each, sugar cane pieces, 4 inches in length*
  • 2 Tbsp (30 mL) red chile, sliced, seeded
  • ½ cup (125 mL) cilantro
  • 1 cup (250 mL) sweet and sour sauce

Directions

  1. Marinate shrimp in fish sauce for 20 minutes. Wash shrimp and add to a food processor with lentils, salt, sugar, and pepper and grind to a paste.
  2. Mix paste with oil, and form around sugar cane pieces.
  3. Grill over a medium gill until crisp and slightly browned.
  4. Garnish with chile and cilantro and serve with sweet and sour sauce.

*Note>
A simplified version of this recipe can be made using skewers and forming the shrimp mixture around the skewer, omitting the sugar cane.
