    1 cup (250 mL) low-fat mayonnaise (plant-based for vegan option)

    ¼ cup (60 mL) ketchup

    ¼ cup (60 mL) relish

    1 lb (500 g) walnuts, finely chopped

    1 lb (500 g) mushrooms, roasted and minced

    1 lb (500 g) whole red lentils, cooked and pureed

    2 Tbsp (30 mL) canola oil

    10 flour tortillas, 6 inch rounds

    2 ½ cups (625 mL) Monterey jack cheese, shredded (plant-based for vegan option)

    2 ½ cups (625 mL) yellow onion, small dice

    5 cups (1.25 L) iceberg lettuce, shredded


Directions

  1. In a small mixing bowl, create a trio sauce by whisking together mayonnaise, ketchup, and relish. Reserve.
  2. In a larger mixing bowl, combine lentils, mushrooms, and walnuts. Work well to create an even emulsification and divide into 10 equal circular patty portions.
  3. Heat a flat top to medium to high heat and lightly oil the surface. Place each portion of lentil mixture onto the flat top and cook for 3-4 minutes.
  4. Lay a tortilla into the top of each portion and press down until the mixture is the same size as the tortilla. Cook until the lentil mixture is cooked until golden brown.
  5. Flip each portion over and top with cheese and lettuce.
  6. Drizzle with sauce and fold in half to create a folded taco.
  7. Serve immediately.
