This sauté was built for any dining occasion, especially breakfast. Great as a side accompaniment or the main event, this dish of turmeric-spiced sweet potatoes and lentils will leave you satisfied and energized to take on the day ahead.
1 Tbsp (15 mL) canola oil
1 cup (250 mL) finely chopped white onion
4 cups (1 L) grated sweet potato
1 tsp (5 mL) ground turmeric
1 cup (250 mL) cooked green lentils
1/ 3 cup (75 mL) crumbled Feta cheese
1/2 cup (125 mL) chopped fresh cilantro
4-6 eggs, prepared as you prefer (fried, poached, etc)
Optional Tips: Add a dollop of plain Greek yogurt before serving. Add some spice by adding 1-2 tsp (5-10 mL) of chili flakes along with the turmeric in Step 2.
