  • VINAIGRETTE:
  • 3 Tbsp (45 mL) cider vinegar
  • 2 tsp (10 mL) whole grain mustard
  • 2 tsp (10 mL) honey
  • 2 Tbsp (30 mL) canola oil
  • SALAD:
  • 1 cup (250 mL) cooked green lentils
  • 1 cup (250 mL) cooked black beans or small red beans
  • 1 cup (250 mL) cooked chickpeas
  • 1 cup (250 mL) finely chopped baby kale
  • 1/ 2 cup (125 mL) finely chopped radicchio
  • 1/4 cup (60 mL) dried cranberries
  • 3 Tbsp (45 mL) chopped fresh cilantro
  • 3 Tbsp (45 mL) thinly sliced green onions
  • to taste, salt and ground black pepper

Directions

  1. In a small bowl, whisk together vinaigrette ingredients. Set aside.
  2. In a large bowl, combine salad ingredients. Toss in vinaigrette and season to taste with salt and pepper.
