  • 1 qt (1 L) whole red (brown) lentils, rinsed
  • 2 cups (500 mL) long grain rice
  • 1 gallon (4 L) vegetable stock
  • 3 Tbsp (45 mL) olive oil
  • 3 cups (750 mL) yellow onion, finely chopped
  • 3 cups (750 mL) grated carrots
  • 1 qt (1 L) broccoli florets, chopped small
  • 2 tsp (10 mL) paprika
  • 1 tsp (5 mL) dried thyme
  • 5 cups (1.25 L) aged cheddar, grated

Directions

  1. Combine lentils, rice, and stock in a large pot. Simmer for 15–18 minutes, stirring occasionally, until tender and most liquid is absorbed.
  2. Heat oil in a frying pan and cook onions for 5 minutes. Add carrots and broccoli; cook for 5 minutes.
  3. Combine lentil-rice mixture with vegetables. Add paprika and thyme and mix well. Add half of the cheese. Spread into an oiled hotel pan. Top with remaining cheese.
  4. Bake at 375°F (190°C) for 25–30 minutes until golden brown on top.
