Harissa Honey Lentils with Whipped Feta

  • 1 cup (250 mL) feta cheese
  • ½ cup (125 mL) plain Greek yogurt
  • 5 Tbsp (75 mL) olive oil, divided
  • 1 tsp (5 mL) lemon zest
  • 2 Tbsp (30 mL) water
  • 1 Tbsp (15 mL) garlic puree
  • 3 Tbsp (45 mL) harissa paste
  • 2 Tbsp (30 mL) honey
  • 6 cups (1.5 L) cooked whole red (brown) lentils
  • 2 Tbsp (30 mL) lemon juice
  • 1 tsp (5 mL) salt
  • ½ tsp (2 mL) pepper
  • ¼ cup (60 mL) minced flat leaf parsley
  • 1 Tbsp (15 mL) chili flakes

Directions

  1. In a mixing bowl, blend feta, yogurt, 2 Tbsp (30 mL) oil, lemon zest, and water until smooth, light, and spreadable. Hold cold.
  2. In sauté pan or large skillet, warm 3 Tbsp (45 mL) of olive oil over medium heat. Add garlic and bloom for 30–45 seconds.
  3. Add harissa and honey, stirring until glossy and warmed through. Add lentils and toss to coat evenly. Heat through.
  4. Add lemon juice, salt, and pepper. Adjust sweet/heat balance as needed.
  5. To plate, swipe whipped feta on plate, mound lentils, and finish with parsley, chili flakes, and an additional drizzle of oil if desired.
