  • Salsa Verde Lentils:
  • 7 cups (1.75 L) cooked whole red (brown) lentils
  • 2 Tbsp (30 mL) olive oil
  • 1 cup (250 mL) salsa verde (prepared)
  • 3 Tbsp (45 mL) lime juice
  • 1 tsp (5 mL) lime zest
  • 1 ½ tsp (7 mL) cumin
  • 1 tsp (5 mL) dried oregano
  • 1 tsp (5 mL) salt
  • ¼ cup (60 mL) minced cilantro
  • Build:
  • 8 cups (2 L) chopped romaine
  • 2 cups (500 mL) roasted/charred corn kernels
  • 2 cups (500 mL) cherry tomatoes, halved
  • 2 cups (500 mL) diced avocado
  • 20 fl oz (625 mL) smokey chipotle ranch dressing*
  • 1 ½ cups (375 mL) tortilla strips
  • 1 cup (250 mL) shredded cheddar-jack cheese

Directions

  1. For the lentils: Warm lentils and olive oil in a sauté pan over medium heat. Add salsa verde and cook just until absorbed, approximately 2–3 minutes. Fold in lime juice, zest, cumin, oregano, and salt. Finish with cilantro. Can be utilized warm or allowed to cool and held for service.
  2. Salad Build: In a large mixing bowl, or hotel pan, very lightly toss romaine, corn, tomatoes, and avocado with the chipotle ranch dressing, being sure not to mash the avocado. Divide mixture evenly between 10 bowls and top with ¾ cup-1 cup (175-250 mL) of salsa verde lentils. Garnish with tortilla strips and shredded cheese.

*To prepare the Smokey Chipotle Ranch Dressing:
1 cup (250 mL) low-fat mayonnaise
½ cup (125 mL) buttermilk
2 Tbsp (30 mL) lime juice
1–2 chipotle peppers in adobo
1 tsp (5 mL) smoked paprika
1 tsp (5 mL) garlic powder
1 Tbsp (15 mL) chopped cilantro
salt, to taste
>Blend all ingredients together until smooth.
