  • 5 cups (1.25 L) cooked brown rice
  • 5 cups (1.25 L) cooked whole red (brown) lentils
  • 6 cups (1.5 L) shredded lettuce
  • 3 cups (750 mL) cherry tomatoes, halved
  • 2 cups (500 mL) sweet corn kernels
  • 2 cups (500 mL) shredded sharp cheddar cheese
  • 10 slices bacon, cooked crisp then crumbled
  • 1 cup (250 mL) crispy tortilla strips
  • 20 oz (600 g) grilled and sliced chicken breast
  • 20 oz (600 mL) BBQ ranch*

Directions

  1. To plate this dish, prepare a base of ½ cup (!25 mL) rice and ½ cup (125 mL) lentils.
  2. Add lettuce, tomatoes, corn, cheese, bacon, and tortilla strips. Top each serving with 2oz (60 g) sliced chicken and a drizzle of dressing.

*To prepare the BBQ Ranch:
15 oz (426 mL) ranch dressing
5 oz (142 mL) BBQ sauce
Whisk together and set aside for service.
