Buffalo Lentils with Celery Slaw

  • 2 cups (500 mL) thinly sliced celery
  • 2 cups (500 mL) shredded cabbage
  • ½ cup (125 mL) low-fat mayonnaise
  • 3 Tbsp (45mL) apple cider vinegar, divided
  • 1 tsp (5 mL) sugar
  • 1 tsp (5 mL) salt
  • ½ tsp (2 mL) black pepper
  • 3 Tbsp (45 mL) butter, unsalted
  • ½ cup (125 mL) buffalo sauce
  • 1 tsp (5 mL) garlic powder
  • 6 cups (1.5 L) cooked whole red (brown) lentils
  • 2 Tbsp (30 mL) minced flat leaf parsley
  • ¼ cup (60 mL) ranch or blue cheese dressing (optional)

Directions

  1. In a mixing bowl, combine celery, cabbage, mayonnaise, 2 Tbsp (30 mL) apple cider vinegar, sugar, salt, pepper. Chill for a minimum of 15 minutes.
  2. Melt butter in a sauté pan over medium heat. Add buffalo sauce and garlic powder. Add lentils and toss to coat thoroughly.
  3. Add remaining apple cider vinegar for brightness and adjust seasoning as needed.
  4. To plate, mound lentils either on a large shareable platter or on side plates and top with celery slaw. Garnish with parsley and an optional drizzle of ranch or blue cheese dressing.
