  • 6 cups (1.5 L) plain Greek yogurt
  • 1 ½ cups (375 mL) almond milk
  • 3 cups (750 mL) mixed berries (strawberries, blueberries, raspberries)
  • 1 cup (250 mL) dark chocolate shavings
  • 1 ½ cups (375 mL) sliced almonds
  • 5 cups (1.25 L) savory lentil granola (see below)
  • basil leaves (optional garnish)
  • honey drizzle (optional garnish)
  • TO MAKE THE SAVORY LENTIL GRANOLA:
  • 2 cups (500 mL) whole red lentils, cooked
  • ¼ cup (60 mL) canola oil
  • ½ cup (125 mL) agave
  • 2 tsp (10 mL) paprika
  • 2 tsp (10 mL) coriander
  • 2 tsp (10 mL) cumin
  • 1 tsp (5 mL) ginger powder
  • 2 tsp (10 mL) salt
  • ¼ cup (60 mL) sunflower seeds
  • 1 cup (250 mL) raw cashews

Directions

  1. In a bowl, whisk yogurt and almond milk until smooth.
  2. For each cup, add ¼ cup (60 mL) mixed berries, ½ cup (125 mL) yogurt mixture, ½ cup (125 mL) lentil granola, and garnish with 1 Tbsp (15 mL) chocolate shavings, 1 Tbsp (15 mL) sliced almonds, and optionally a basil leaf and drizzle of honey.
  3. Refrigerate until service (up to 48 hours).

Savory Lentil Granola:
Pre-heat an oven to 325°F (160°C).
In a large mixing bowl, combine the ingredients together and stir to evenly coat and blend.
Spread the mixture in an even layer onto a parchment lined sheet tray and bake for 30-45 minutes until the mixture is golden brown and aromatic.
Stir every 10-15 minutes so that it bakes evenly.
Allow the mixture to cool completely. Store in an airtight container for up to one month.
