  • 6 cups (1.5 L) plain Greek yogurt
  • 1 ½ cups (375 mL) coconut milk
  • 3 cups (750 mL) pineapple, small dice
  • 1 cup (250 mL) shredded coconut, toasted
  • 1 ½ cups (375 mL) flaked almonds
  • 5 cups (1.25 L) savory lentil granola (see below)
  • mint leaves (optional garnish)
  • honey drizzle (optional garnish)
  • TO MAKE THE SAVORY LENTIL GRANOLA:
  • 2 cups (500 mL) whole red lentils, cooked
  • ¼ cup (60 mL) canola oil
  • ½ cup (125 mL) agave
  • 2 tsp (10 mL) paprika
  • 2 tsp (10 mL) coriander
  • 2 tsp (10 mL) cumin
  • 1 tsp (5 mL) ginger powder
  • 2 tsp (10 mL) salt
  • ¼ cup (60 mL) sunflower seeds
  • 1 cup (250 mL) raw cashews

Directions

  1. In a bowl, whisk yogurt and coconut milk until smooth.
  2. For each cup, add ¼ cup (60 mL) diced pineapple, ½ cup (125 mL) yogurt mixture, ½ cup (125 mL) lentil granola, and garnish with 1 Tbsp (15 mL) coconut, 1 Tbsp (15 mL) almonds, and optional mint leaf and drizzle of honey.
  3. Refrigerate until service (up to 28 hours).
