    1 lb (500 g) whole red lentils, cooked

    2 cups (500 mL) corn flakes cereal

    ½ cup (125 mL) peanuts, roasted and salted, roughly chopped

    ½ cup (125 mL) cashews, roasted and salted, roughly chopped

    ¼ cup (60 mL) canola oil

    ¼ cup (60 mL) golden raisins

    1 cup (250 mL) curry leaves

    1 cup (250 mL) mint leaves

    2 tsp (10 mL) garlic powder

    1 tsp (5 mL) turmeric

    1 tsp (5 mL) paprika

    1 tsp (5 mL) salt

    ¼ cup (60 mL) maple syrup


Directions

  1. Preheat an oven to 425°F (220°C).
  2. Place lentils in a single layer on a sheet tray and roast until dry and crispy, roughly 10-15 minutes. Be sure to toss at least once halfway through.
  3. Transfer lentils to a large mixing bowl. Add corn flakes, peanuts, and cashews and set aside.
  4. Heat oil in a sauté pan and once hot, add raisins and fry for 1 minute until they have plumped. Remove from pan and add to the lentils and nuts.
  5. Lower heat to medium-low and fry curry and mint leaves for 1 minute. Add garlic, turmeric, and paprika and stir.
  6. Add spice mixture to the lentil blend. Add salt and maple syrup and mix well with a spatula. Enjoy either warm or room temp.
