Lentil Bobotie (South African Casserole)

    6 slices white bread, crusts removed

    2 cups (500 mL) whole milk

    3 Tbsp (45 mL) vegetable oil

    1 cup (250 mL) yellow onion, minced

    2 Tbsp (30 mL) garlic, minced

    ½ cup (125 mL) carrot, grated

    2 tsp (10 mL) turmeric

    1 tsp (5 mL) curry powder

    2 tsp (10 mL) cumin

    2 cups (500 mL) whole red lentils, cooked and drained

    8 oz (250 g) ground beef

    1 cup (250 mL) low-sodium vegetable stock

    1 tsp (5 mL) kosher salt

    3 Tbsp (45 mL) marmalade

    4 eggs

    6 bay leaves, dry


Directions

  1. Preheat oven to 375°F (190°C).
  2. Soak bread in 1 ½ cups (375 mL) milk and set aside.
  3. In a large pan over medium heat, add oil and onion and sauté for 5 minutes. Add garlic and carrot and cook for an additional 4-5 minutes.
  4. Add turmeric, curry powder, and cumin and stir to coat and heat through for 1 minute.
  5. Add lentils, beef, and salt and cook until the beef has browned.
  6. Add stock and marmalade and stir well to blend, simmering for 10 minutes.
  7. Squeeze excess milk from the bread and add to the lentil mixture, mixing well to evenly distribute.
  8. Empty mixture into a hotel pan.
  9. In a small bowl, blend eggs with remaining ½ cup (125 mL) milk and pour over the lentil mixture, arranging the bay leaves on top.
  10. Bake for 30-45 minutes, until golden in color and the egg layer has set.
