    7 ½ cups (1.875 L) water

    1 tsp (5 mL) salt

    2 ½ cups (625 mL) whole green lentils, dry and rinsed well

    ⅓ cup (75 mL) canola oil

    1 cup (250 mL) yellow onions, quartered and sliced thin

    1 cup (250 mL) walnuts, roughly chopped

    1 cup (250 mL) dried apricots, roughly chopped

    1 Tbsp (15 mL) black pepper, fine ground

    ½ cup (125 mL) flat leaf parsley, minced


Directions

  1. In a large pot, add water, salt, and lentils. Bring to a boil. Reduce to a simmer and cook for 17 minutes until al dente.
  2. While lentils are cooking, add oil to a sauté pan and heat over a medium heat. Cook onions until golden brown, approximately 7 minutes. About 1 minute before onions are done, add walnuts and apricots to the pan and allow the apricots to caramelize and lightly toast the walnuts.
  3. When the lentils are done, drain them of any excess water and transfer to the onion mixture. Fold together gently and allow to sit for 2 minutes.
  4. Season with pepper and garnish with the parsley just prior to serving.
