1/4 cup (60 mL) chopped, fresh, spicy chorizo sausage (casing removed)
1 Tbsp (15 mL) canola oil
1/2 cup (125 mL) finely chopped white onion
2 garlic cloves, finely chopped
1 Tbsp (15 mL) all-purpose flour
1/2 cup (125 mL) beer (lager/blond)
1/4 cup (60 mL) split red lentils
3/4 cup (175 mL) 2% milk
1 Tbsp (15 mL) drained and chopped pickled jalapeno, plus 1 Tbsp pickling juice
3/4 cup (175 mL) grated Monterey Jack cheese
3 Tbsp (45 mL) chopped fresh cilantro
Quick tip: Be sure to cook onions and garlic until a rich golden colour has been achieved for best flavour.
