Lentil Crostini Appetizer

    3 Tbsp (45 mL) olive oil (plus extra for drizzling)

    1 cup (250 mL) shallots, minced

    2 Tbsp (30 mL) garlic, minced

    2 tsp (10 mL) cumin

    2 tsp (10 mL) smoked paprika

    2 ½ cups (625 mL) whole red lentils, cooked and drained

    salt & pepper, to taste

    1 ½ cups (375 mL) ricotta cheese

    3 Tbsp (45 mL) fresh herbs (parsley, basil, or thyme), chopped

    3 Tbsp (45 mL) lemon juice

    2 baguettes, sliced into about 20 rounds


Directions

  1. Heat 2 ½ Tbsp (35 mL) oil in a pan over medium heat. Sauté shallots and garlic until softened, approximately 3 minutes. Add cumin, smoked paprika, and lentils. Season with salt and pepper. Stir and cook for 3-4 minutes. Remove from heat and let cool.
  2. Prepare the herbed ricotta: In a bowl, mix ricotta, fresh herbs, lemon juice, salt, and a drizzle of oil.
  3. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush with oil, and toast for 8-10 minutes until golden.
  4. Spread herbed ricotta on each crostini, top with a spoonful of the seasoned lentils, and drizzle with oil if desired. Serve and enjoy.
