Ingredients

  • 2 Tbsp (30 mL) canola oil
  • 20 pork sausages
  • 2 cups (500 mL) yellow onion, sliced
  • 2 cups (500 mL) carrots, sliced
  • 1 ½ cups (375 mL) celery, sliced
  • 2 cups (500 mL) cremini mushrooms, quartered
  • 2 Tbsp (30 mL) garlic, minced
  • ¼ cup (60 mL) tomato paste
  • 4 cups (1 L) crushed tomatoes
  • 4 cups (1 L) chicken stock
  • 5 cups (1.25 L) cooked whole red (brown) lentils
  • 2 Tbsp (30 mL) Worcestershire sauce
  • 1 Tbsp (15 mL) Dijon mustard
  • 1 Tbsp (15 mL) thyme, chopped
  • 1 tsp (5 mL) rosemary, chopped
  • 1 ½ tsp (7 mL) salt
  • ½ tsp (2 mL) pepper
  • ½ cup (125 mL) parsley, chopped

Directions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a large sauté pan over medium-high heat. Add sausages and brown for 6–8 minutes, turning occasionally. Remove sausages from the pan and set aside.
  3. Add onion, carrots, celery, and mushrooms to the same pan. Sauté for 5–6 minutes until beginning to soften. Add garlic and tomato paste and cook for 1 minute.
  4. Add tomatoes, stock, Worcestershire, Dijon, thyme, rosemary, salt, and pepper. Bring to a simmer. Add lentils and gently stir to combine.
  5. Transfer the lentil mixture to a standard hotel pan. Arrange browned sausages evenly over the top and gently press into the sauce.
  6. Cover with foil and bake for 20 minutes. Remove foil and continue baking for 10–15 minutes until the sausages reach an internal temperature of 165°F (74°C) and the casserole is bubbling.
  7. Finish with fresh parsley and hold hot for service.
