Start the morning off on the right foot with bright and cheery breakfast tacos. A light and lively salsa is made with creamy avocado, cooked green lentils, radish, cilantro, jalapeno pepper, garlic, and lime. Simply top warm corn tortillas with cooked eggs, a bit of the salsa, and Feta cheese. Don’t forget that drizzle of hot sauce!

Directions

  1. Preheat oven to 200°F (100°C).
  2. To make the salsa, combine all ingredients in a medium bowl. Season to taste with salt and pepper.
  3. To make the tacos, wrap tortillas in aluminum foil and place in the oven for about 6 minutes to warm. Heat 1 Tbsp (15 mL) butter in a large skillet over medium heat. Cook eggs, four at a time to your preferred doneness. Place one egg on top of one warm tortilla. Top with salsa, crumbled Feta, cilantro, and a drizzle of your favourite hot sauce. Repeat with remaining tortillas.

SALSA:

1 ripe avocado, diced

1/2 cup (125 mL) cooked green lentils

1/4 cup (60 mL) diced red onion

1/4 cup (60 mL) chopped fresh cilantro, plus more for serving

half jalapeno pepper, diced

2 radishes, diced

1 lime, juiced

1 Tbsp (15 mL) extra virgin olive oil

1 garlic clove, minced

1/2 tsp (2 mL) chili powder

to taste, salt and pepper

TACOS:

8 corn tortillas

2 Tbsp (30 mL) unsalted butter

8 eggs

1/2 cup (125 mL) crumbled Feta cheese

hot sauce, for serving
