Directions

  1. STIR the milk, rice, sugar, split vanilla bean pod, and cinnamon stick together in a medium saucepan.
  2. BRING the mixture to a boil. Reduce heat, cover with a lid, and simmer for approximately 45 minutes. Stir regularly to ensure that the rice does not stick to the bottom of the pan. After about 30 minutes, add the dried cranberries. The rice is ready when most of the milk is absorbed; it should be creamy in texture and appearance and the grain should still hold together.
  3. SCRAPE the contents of the vanilla bean into the mixture; discard the pod and the cinnamon stick. Stir in the cooked lentils.
  4. FOR the apple topping: toss the apple, lemon juice, honey, and cinnamon together.
  5. POUR the pudding into a bowl and toss on the apple topping.

1 whole vanilla bean, halved

1 whole cinnamon stick

¼ cup (60 mL) dried cranberries

1 cup (250 mL) cooked red lentils

Apple topping

1 gala apple, cored and finely diced

½ tsp (2 mL) lemon juice

½ tsp (2 mL) honey

dash ground cinnamon
