Crispy Tater Tots with Lentils & Bacon

Everyone loves tater tots. With the addition of cheddar, bacon, and lentils, this is a side dish everyone in the family will enjoy.

    1 lb (500g) frozen tater tots or potato puffs

    1 cup (250 mL) shredded sharp cheddar cheese

    3 slices cooked bacon, chopped

    1 cup (250 mL) cooked green lentils

    1 tsp (5 mL) chili powder

    2 green onions, chopped


Directions

  1. Preheat oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  2. Place tater tots on the prepared baking sheet and roast for 20 minutes, stirring at the 10 minute mark.
  3. Remove from oven and sprinkle with cheese, bacon, lentils, and sprinkle with chili powder.
  4. Return to the oven and bake for another 5-7 minutes, until the cheese has melted and lentils are crispy. Remove from the oven and scatter the green onions on top.
  5. Serve as a side dish alongside grilled chicken, sausages, vegetables, or fried eggs.

Salsa or sour cream are wonderful accompaniments to this kid-friendly side dish.
