Brown rice and lentils are cooked together with a herb dressing of onion, parsley, thyme, salt, and pepper folded throughout.

½ cup (125 mL) canola oil
½ cup (125 mL) red onion, minced
¼ cup (60 mL) fresh flat leaf parsley, minced
¼ cup (60 mL) fresh thyme, minced
½ tsp (2 mL) salt
½ tsp (2 mL) pepper
2 cups (500 mL) whole red lentils, cooked and drained well
2 cups (500 mL) brown rice, cooked and drained well
